High Fiber + Protein Blueberry Waffles
These fiber and protein packed waffles are filling and delicious. A healthy spin on a weekend favorite.
Equipment
- Waffle Iron
- Blender
- Silicone brush
Ingredients
- 1 serving @birchbenders vegan protein waffle mix (the waffle recipe
- 4 crackers gg crispbread crackers pulverized in a blender
- 1 tsp cinnamon
- 1/4 tsp nutmeg (I ground mine fresh)
- 1/4 cup fresh blueberries
- 1-2 tbsp coconut oil
- 1/3 cup egg whites
- 1/4 cup water Add slowly and stir to get a semi-thick consistency. You may not need all the water but you may need more.
Instructions
- Mix all ingredients except blueberries together until well mixed
- Fold in blueberries to batter
- Coat the waffle iron with coconut oil using a silicone brush
- Cook until desired doneness
