High Fiber + Protein Blueberry Waffles

These fiber and protein packed waffles are filling and delicious. A healthy spin on a weekend favorite.

Equipment

  • Waffle Iron
  • Blender
  • Silicone brush

Ingredients

  • 1 serving @birchbenders vegan protein waffle mix (the waffle recipe
  • 4 crackers gg crispbread crackers pulverized in a blender
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg (I ground mine fresh)
  • 1/4 cup fresh blueberries
  • 1-2 tbsp coconut oil
  • 1/3 cup egg whites
  • 1/4 cup water Add slowly and stir to get a semi-thick consistency. You may not need all the water but you may need more.

Instructions

  • Mix all ingredients except blueberries together until well mixed
  • Fold in blueberries to batter
  • Coat the waffle iron with coconut oil using a silicone brush
  • Cook until desired doneness
