High Fiber + Protein Blueberry Waffles
These fiber and protein packed waffles are filling and delicious. A healthy spin on a weekend favorite.

- 1 serving @birchbenders vegan protein waffle mix (the waffle recipe
- 4 crackers gg crispbread crackers pulverized in a blender
- 1 tsp cinnamon
- 1/4 tsp nutmeg (I ground mine fresh)
- 1/4 cup fresh blueberries
- 1-2 tbsp coconut oil
- 1/3 cup egg whites
- 1/4 cup water Add slowly and stir to get a semi-thick consistency. You may not need all the water but you may need more.
Mix all ingredients except blueberries together until well mixed
Fold in blueberries to batter
Coat the waffle iron with coconut oil using a silicone brush
Cook until desired doneness
