I’m always on the hunt for high protein, high fiber food choices. When I can make that happen in a dessert, it’s like striking gold.
Why?
Protein + fiber = feeling fuller longer. That translates to eating less, less often. When we do that, losing and maintain a healthy weight is practically effortless.
Protein is something we can’t store and are constantly in need of. Our bodies are always breaking down and building up proteins, so we need a steady influx of protein to feel and perform our best. Protein also has the added benefit of making us feel full and reducing cravings.
I read the book F-Factor Diet and it really painted a clear picture of how important fiber is not just to our gut health but also weight loss. Fiber helps usher fat and calories through our system by binding to fat so we don’t store it.
When these two powerhouses combine in one food, I’m sold. That’s why I love chia seeds.
Enter, my new favorite dessert or snack! Yes it’s healthy enough to be a snack.
Chocolate Chia Seed Pudding Dessert
Ingredients
- 2 tbsp Chia seeds
- 4 fl oz Coconut milk (unsweetened)
- 1 tsp Cacao or Cocoa powder (unsweetened)
- 1/2 tsp Maple syrup, grade A dark robust flavor
- 1/2 cup Frozen berries
- 1 cookie Coconut peanut butter cookies (optional) pick your peanut butter topping linked below
- 1 tbsp Peanut butter (optional) sub for pb cookies
- 1 tbsp Cacao nibs optional
Instructions
- Mix chia seeds, coconut milk, cacao powder, and maple syrup in a glass jar, let sit in the fridge for 1 hour.
- Add preferred toppings and serve immediately or save some for later.
