I like to use parchment paper in the oven to help keep the potatoes crispy on the outside. The oven is nice because you can just leave it for 20 minutes at a time and the potatoes are all done at the same time.
Alternatively, the air fryer works perfectly for potatoes. If you are doing a smaller batch (for one or two servings) the air fryer would probably work better. Just keep in mind, if you use an air fryer, don’t have more than one layer as the steam will make them soggy.
You can always opt for fresh garlic and rosemary, it would probably give the potatoes a better flavor. I didn’t have any on hand and just used garlic powder and dried rosemary. They still came out great! My husband said something like, “I don’t know what you did to these but please do this again.” So either dried or fresh seasoning will work.
One (or two I guess) tips I have is to upgrade your salt and pepper.
We use kosher salt and fresh ground pepper. Kosher salt is not the same thing as sea salt. Kosher salt is mined from the earth and has less of a strong salty taste. We use it in all our cooking. Sea salt (obv from the sea) has a strong salty flavor, which can be overdone easily. Kosher salt always seems to bring a nice balance to our food. Get yourself a salt cellar (not a mill) to store your salt. We aren’t grinding kosher salt here. I love this one with the spoon, we have one just like it.
As for fresh ground pepper, well, the more fresh the better, right? I can definitely tell the difference in our cooking when we use fresh ground pepper. You’ll be using your pepper mill daily so make sure to get a good one. I think ours cost something ridiculous like $75! But I found this one with good reviews and I like that it’s wood, not plastic.
Everything I post on this website supports eating healthy but not compromising flavor. By making the switch, I’m sure you will be able to see why. These are small but powerful trade-offs from your typical table salt and pepper.
Roasted Rosemary Garlic Potatoes
Equipment
- Baking sheet and parchment paper
Ingredients
- 1 bag Potatoes – your choice! I chose baby medley potatoes
- 1 tbsp Extra virgin olive oil
- 1 tbsp Dried rosemary
- 1 tsp Kosher salt (more to taste)
- 1 tsp Fresh ground pepper (to taste)
- 1.5 tsp garlic (fresh or powder) fresh tastes better but in a time crunch garlic powder will work
Instructions
- Preheat the oven to 450
- Slice your potatoes into bite size pieces, spread them on a parchment paper lined baking sheet
- Drizzle the EVOO on potatoes, mix. Add salt, pepper, garlic and rosemary to coat evenly
- Bake about 20 minutes or until starting to brown, then flip and bake another 15-20 minutes until desired doneness
