So often I hear “I don’t like vegetables” or “Veggies don’t taste good.” But when those same people see what I’m eating, they say how good it looks. That’s because of how I cook them.
If you don’t like veggies, chances are, you don’t know how to cook them properly to taste good.
Vegetables should almost always taste good. Seriously. If they don’t taste good, you need to change your methods.
There are many ways to cook vegetables. However, people often don’t know the right ways to cook their veggies to make them taste good, thereby not consuming enough vegetables. When you know how to make vegetables taste good, your likelihood of eating them goes up.

Cast Iron – pan fry/sear your veggies to al dente perfection. This is a tried and true way to ensure you get that charred exterior with a crunchy interior. I use this most often as stove-top cooking is convenient and creates my favorite results.
Oven roasting – When you don’t have time for stirring and flipping your veggies, place them on a baking sheet with parchment paper and check some flavor options below to make them extra tasty.
Air fryer – I especially love the air fryer for starchy veggies like sweet potatoes (healthy fries!!), but really any vegetable does great in the air fryer. Like pan frying, it will also give a charred exterior with an al dente interior.
Instant pot – this method is great for stews and soups. The veggies cook perfectly with everything else in the pot and take on the flavors of your herbs, spices, or sauces.
Grill – my personal favorite way to cook veggies is on a grill for its fast, efficient, and easy way to get the charred roasted veggies I love.

- Do buy fresh produce. Higher in nutrient value and tastes much better
- Don’t buy frozen or canned veggies. These should only be purchased in a pinch.
- Don’t overcook. This leads to mushy, unsatisfying veggies. No one wants mushy veggies.
- Don’t boil. This strips healthy nutrients from your vegetables and makes them mushy!
