Simple Kale Salad
A quick and easy kale salad
Ingredients
- 2 cups Kale
- 1/4 cup Shredded carrots
- 1/4 cup Shredded purple cabbage
- Juice of 1/2 lemon
- 1 tsp Kosher salt
- Fresh ground pepper
- 1 tsp Extra virgin olive oil
Instructions
- Rinse and chop kale, place in large bowl
- Rinse and chop carrots and cabbage (or buy pre-chopped, but this is more expensive)
- Add all ingredients to bowl, mix well, and serve
