Something about summer just screams salad. I love this time of year because there is a shift in energy. What we do, how we feel, and that includes, what we eat.

Your peaches will taste better in the season they are ripe and that is during the summer! The same goes with Arugula.
This is a versatile summer salad you can mix and match and add what you will to. I love to add as much color to my salads and there really is no limit of what you can do.
Arugula Peach Summer Salad
Ingredients
- 2 cups Arugula
- 1 Sliced peach
- 1/2 cup Shredded cabbage
- 1 tbsp Sliced almonds (optional)
- 1 tsp Extra virgin olive oil
- 1 tsp Balsamic vinegar
- 1/2 tsp Kosher salt
- Fresh group pepper to taste
