Egg + Egg White Omelette

Equipment

  • Carbon steel pan and cover
  • Spatula
  • Basting brush

Ingredients

  • 1 Egg
  • 3/4 cup Egg whites
  • 1 cup Spinach
  • 1 tsp Extra virgin olive oil
  • 1 tbsp Nutritional yeast optional

Instructions

  • Heat pan to medium low, add tsp oil, brush to coat pan
  • Add spinach to pan, cover about 1-2 minutes
  • In a measuring cup, crack 1 egg, fill rest with egg whites to 1 cup line, pour over spinach. If you opted to use nutritional yeast, sprinkle on top, cover.
  • Once egg whites have cooked (not clear or moving like jell-o), use spatula to flip, cooking the top for no more than 10-20 seconds
  • Fold omelette in half, serve.

Notes

Nutrition:  32g protein, 4g carbs, 10g fat.
This high protein breakfast main can be served with various sides.  For fast paced mornings I grab 3-4 GG crackers to pair it with.  You can also add some berries, a banana, 1/2 cup of rice, 100g of sweet potato.
